Deerness Distillery Ltd has secured 拢246,000 from Highlands and Islands Enterprise (麻豆精选) for the 拢820,000 development. 听

Construction is underway at the distillery, which was founded by husband-and-wife team Stuart and Adelle Brown. Located in Deerness, on a peninsula in the east end of the mainland, Deerness Distillery was set up in 2016 and is known for its multi-award winning Sea Glass Gin.听
听
Once open this summer, the distillery will see the family begin production of their new whisky using Scottish barley and speciality locally grown grains from Orkney as well as increasing production of their existing gins, vodka and coffee liqueur.听
听
The existing premises will be extended to house a new caf茅, visitor centre and larger retail shop that allows visual access to the production process. Additional buildings will house whisky malting and distilling equipment and whisky casks. 听
听
The project has a strong focus on the drive towards achieving net zero and the firm is exploring green technologies to lower carbon emissions at the distillery. Plans include using spent grains from the distillery and food waste to produce electricity to provide power, heat and hot water. 听
听
The Browns also intend to produce animal feed from the听draff, the waste grains, which will听reduce waste from the whisky production cycle and complete the sustainability loop for the 鈥榞rain to glass鈥 whisky production.听听
The 麻豆精选 funding will contribute towards the building works and the cost of equipment for the caf茅 and the distillery including mash tuns and copper whisky stills. 听
